Aubergines, or eggplant in America and Australia, are a summer vegetable, low in fat and bursting with vitamins and minerals. Aubergine recipes are a healthy choice and an important vegetable to have in your diet and it is said that aubergine can actually help to reduce weight.
Aubergines are of Indian origin and also cultivated in south and east Asia. The deep purple aubergine is the most common variety imported to Britain and Ireland and you will find endless aubergine recipes to choose from. Don’t be put off by the bitter flavour when this vegetable is raw, once roasted, fried or baked, aubergines become juicy and tender with a rich, tasty flavour.
