Aubergine lasagne

  • 2 aubergines sliced
  • 500g cooked chicken breasts
  • 1 tin chopped tomatoes
  • 1 diced onion
  • 250g grated mozzarella
  • 285ml double cream

Step 1

In a bowl place boiling water enough to cover all the aubergines, cover it and leave it for at least 1 hour . It is going to pre cook the aubergines.
Mix the chicken, double cream, onion and tomatoes
To assemble the lasagne: in a oiled tin make a line with aubergine slices and cover it with the chicken mix and repeat. The last line will be with aubergines.
Cover with mozzarella
Cover the baking tray with foil and bake in a pre heated oven for 40 minutes.
Remove the foil and bake it until is golden brown
