Lemon sole with Parmesan spinach

Preheat the grill to medium
- 8 lemon sole fillets, skinned
- 2 tbsp olive oil
- 300g bag spinach leaves
- 50g Parmesan, grated
- pinch ground nutmeg
- 3 tbsp crème fraîche
- 400g cherry tomatoes on the vine, roasted
Eggplant Caponata

In a large 12 to 14-inch saute pan, over medium heat, heat the olive oil until hot but not smoking
- 1/2 cup virgin olive oil
- 1 large Spanish onion, chopped in 1/2-inch dice
- 3 tablespoons pine nuts
- 3 tablespoons currants
- 1 tablespoon hot chili flakes, plus extra for garnish
- 2 medium eggplant, cut into 1/2-inch cubes (to yield 4 cups)
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon unsweetened cocoa powder
- 2 teaspoon fresh thyme leaves or 1/2 teaspoon
- 1/4 cup basic tomato sauce, recipe follows
- 1/3 cup balsamic vinegar
- Salt and freshly ground pepper
- 5 sprigs mint, chopped
- 1 baguette, sliced into 3/4-inch rounds and toasted on grill or in oven
Grilled chicken with Pico de Gallo

A quick and easy summer dish for when it's too warm (or sunny!) to fuss around in the kitchen
- For grilled chicken and seasoning
- 2 chicken breasts
- 1/2 tsp paprika
- 1/2 tsp powdered cayenne pepper
- 1/2 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- Salt and pepper to taste
- Juice of half a lime
- 2 tbsp of preferred oil, for frying
- For Pico de Gallo
- 2 large vine-ripened tomatoes
- 1/4 cup of chopped onion, either red or white (more can be added to taste)
- 1/2 cup chopped fresh cilantro
- Half of a medium-sized jalapeño, de-seeded, or adjust to desired hotness.
- 3 tablespoons of freshly squeezed lime juice, or adjust to taste
- Salt and Pepper to taste
Tuna and Cheese Melts

These were first made for us by a couple of friends and they have been a real family staple ever since
- 4 slices bread of your choice
- 1 Tin of Tuna in Oil or Brine Drained
- 2 tablespoons of Mayo
- 1 tablespoon Salad Cream
- Good pinch of freshly ground black pepper
- Good shake of lemon juice
- small pinch of cayenne pepper
- Grated cheese to top
- Slices of tomato or onion (optional)
Curry Chicken Toastie

This toasted sandwiched are very simple to make and very tasty and healthy
- 4 slices of bread ( white or wholemeal)
- 25g butter
- 75g cooked Chicken
- 50g cooked diced carrot
- 2 tablespoon curry paste
- 50g grated cheddar cheese
Grilled mushroom risotto

Grill the mushrooms and scattered them on top of the risotto for a gorgeous, nutty flavour
- 1.5 litres organic chicken or vegetable stock, hot
- 1 handful dried porcini mushrooms
- olive oil
- 1 small onion, peeled and finely chopped
- 2 sticks celery, trimmed and finely chopped
- 400 g risotto rice
- 75 ml vermouth or white wine
- sea salt
- freshly ground black pepper
- 4 large handfuls wild mushrooms (try shiitake, girolle, chestnut or oyster), cleaned and sliced
- a few sprigs fresh chervil, tarragon or parsley, leaves picked and chopped
- juice of 1 lemon
- 1 teaspoon butter
- 1 small handful Parmesan cheese, freshly grated, plus extra for serving
- extra virgin olive oil.

- 1 Medium Pumpkin
- 2 large Pink Onions
- 2 Chilli Pods
- 4 Pods Dry Red Chillies
- 10-12 Pods of Pepper (optional)
- 1/4 tsp. mustard
- 1/2 tsp. Urad dal - skinned black gram
- 3 tbsp. oil
- 1 sprig of curry leaves
- 1 ltr. water
- 1 pinch of turmeric
- Salt to taste
- 300 gms Cane Jaggery
- 200 gms Tamarind paste
