Full of vegetables, this ratatouille will rock your socks.

Ingredients
- 1 Onion (Peeled and Chopped)
- 1 Clove of Garlic (Peeled and Crushed)
- 1 Small Aubergine (Diced)
- 1 Green Pepper (De-seeded and Chopped)
- 1 Courgette (Sliced)
- 2 Cans Chopped Tomatoes
- 10ml Oil (any type is suitable)
- 1 Handful Fresh Basil

Preparation
Step 1
Fry the onion and garlic in the oil for 5 minutes or until lightly browned in a saucepan
Step 2
Add the aubergine and fry for a further five minutes
Step 3
Add the pepper, courgette and tomatoes
Step 4
Bring to the boil and then gently simmer with the lid on the saucepan for 20-30 minutes
Step 5
Stir in the torn basil leaves
Step 6
