Mille-feuille of asparagus and almond cream and Parmesan

Puff pastry version:
Cut the puff pastry into 6 triangles
- 1 or 2 rolls of puff pastry 230g each or 4 sheets of filo
- 18 fresh or frozen green asparagus
- 20g butter
- Zest and juice of 1 orange untreated
- 3 tablespoons almond powder
- 6 tablespoons cream
- 3 tablespoons Parmesan

Roast Squash with Pear and Kiwi Chutney

- 3 tbsp vegetable oil
- 2 tsp Panch pooran mix (1tsp fenugreek
- 1 tsp poppy seed
- 1 tsp black mustard seed
- 1 tsp fennel
- 1 tsp cumin seeds)
- 2 tsp coriander seeds - crushed
- 4 garlic cloves - crushed and chopped
- 1 tsp dried red chilli flakes
- 3cm fresh ginger root - sliced
- 200g Manuka honey
- 200ml lemon juice or vinegar
- 2 tsp salt
- 8 pears - skins remaining cored & cut into chunks
- 4 kiwi fruit - peeled & cut into chunks
- 1 squash (acorn preferable) cut into quarters and deseeded
- 2 tbsp olive oil
- 30g Vegetarian/ Vegan cheese if able to source & finely grated.

- Parsley (not curly) and chives
- 200g of Tomme de Savoie
- 1 bunch asparagus (250g)
- 2 pink grapefruits
- Chicory salad
- 1 handful of baby spinach leaves
- 2 Granny Smith Apples

Eggplant Caponata

In a large 12 to 14-inch saute pan, over medium heat, heat the olive oil until hot but not smoking
- 1/2 cup virgin olive oil
- 1 large Spanish onion
- chopped in 1/2-inch dice
- 3 tablespoons pine nuts
- 3 tablespoons currants
- 1 tablespoon hot chili flakes
- plus extra for garnish
- 2 medium eggplant
- cut into 1/2-inch cubes (to yield 4 cups)
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon unsweetened cocoa powder
- 2 teaspoon fresh thyme leaves or 1/2 teaspoon
- 1/4 cup basic tomato sauce

- 1/3 cup balsamic vinegar
- Salt and freshly ground pepper
- 5 sprigs mint
- chopped
- 1 baguette
- sliced into 3/4-inch rounds and toasted on grill or in oven
