Tomato and Mascapone Soup

A tasty creamy soup
- 1kg tomatoes
- pinch sugar
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 large onion, chopped
- Thyme or other herb of choice
- 2 garlic cloves, chopped
- 1 tbsp tomato purée
- 600ml vegetable stock
- 2 tbsp mascarpone cheese (or use double cream as alternative)

Can be eaten with any gravy or curry
- Frozen mixed vegetables like carrots, beans, cauliflower and peas. Make shore the vegetables are brought to room temperature and tiny in size, salt, turmeric powder, whole dry spices 3-4 cardamom, 1 small cinnamon bark, 2-3 bay leaves, 4-5 peppercorns, 3-4 cloves, mix nuts and raisins if required, fried onion, Basmati Rice 250 gms, cooking oil, cumin seeds, saffron, coriander leaves.

Preset your oven to 180 C/ Gas mark 4 and grease two sandwich tins
- 125g butter
- 125g caster sugar
- 75g self raising flour
- 50g coco powder
- 2 eggs
- 3 table spoons of warm water
- For the filling-
- Cream
- Jam

Persian Aubergine Frittata

- 120ml sunflower oil
- 3 medium onions, chopped
- 3 medium aubergines, cut widthways, halves cut into slices, then each slice into strips
- 5 free range eggs
- 2 tbsp spelt or millet flour
- 1 1/2 tsp baking powder
- 25g chopped fresh parsley
- 1 tsp saffron strands, dissolved in tbsp water
- 3 garlic cloves, crushed
- 1/2 tsp salt
- Black pepper
- 20g dried barberries, cleaned

- 1/4 Peeled ginger
