Baigan Choka (Caribbean Aubergine Dip)

- 3 medium aubergines
- 1 mild red chilli
- 1/2 tbsp olive oil
- 1/ tbsp sunflower oil
- 1/2 small onion - thinly sliced
- 1 garlic clove - crushed
- 1 tbsp chopped chives
- Salt
Ratatouille

Wash all the vegetables. Dice the peppers, slice the courgettes and quarter the tomatoes
- 300g peppers
- 3 tbsp Ketchup
- 100g courgettes
- 100g cherry tomatoes
- 1 shallot
- 1 small onion
- 20 cl tomato coulis
- 1 clove of garlic
- 1 tbsp olive oil
Peas Pulao ( Pilau rice with green peas)

Peas Pulao is a very nice and aromatic rice dish
- 500 gm Basmati Rice
- 200 gm Green Peas
- 1-2 tablespoons of Oil : Ghee (preferred)/Sunflower oil

- Cummin Whole(Jeera): 1/4 teaspoon
- Cinnamon (Darchini): 1/4 of a stick
- Cardamom (Elaichi): 3 small and 3 big
- Clove (Labongo/laung): 3
- Bay leaves (Tejpata) : 3
- Cumin powder (Jeera): 1 tea-spoon
- Turmeric powder (Halud/Haldi): 1/2 tea-spoon
- Water
- Salt to Taste
Lentil Soup with Brusselsprouts (Moog Musur Bilati Bandhakopi Dal )

- 200gm fresh bilati bandhakopi (Brusselsprout)
- 100gm Musur Dal (Red Lentil seeds)
- 100gm Moog Dal (Yellow moong seeds)
- 2 Green Chillies
- 2-3 tablespoons of Oil : Mustard oil(preferred)/Sunflower oil
- Spices:
- Panch phoron/Panchpuran: 1/3 tea-spoon
- Turmeric powder (Halud/Haldi): 1/2 tea-spoon
- Sugar: 1/4 tea-spoon
- 700ml Water
- Salt to Taste

- 1 Block of Cheese / Bag of grated cheese

- 1 tin chopped tomato
- 2 stock cubes
- 1 large potato

- 400g chickpeas - drained and rinsed

- Baconless Egg Pie to feed 2-4
- I x small pack of frozen pastry, mine was 360gms
- A few mushrooms
- 3 x vegetarian sausages
- A few Cherry tomatoes
- 4 x eggs
- Pilgrim’s Choice Cheese (I used the Farmhouse Vintage Cheddar) - I cut 3 slices from the end and them cut these into small bits about 1/4″ ( you could grate the cheese but you would then have to wash the grater!)
- salt, pepper, flour for dusting, margarine or butter to grease the dish or baking tray
