Vegetable Shepherd's Pie

This meat-free alternative to shepherd's pie is as tasty and satisfying as a the lamb-filled original
- 750g potatoes,
- 1 small turnip,
- 500g lentils,
- 6 medium sized carrots,
- 150g salted butter,
- bunch of fresh parsley,
- 3 large onions,
- half a bunch of celery,
- Vegetable stock cube plus any dried mixed herbs of your choice (herbes de provence are good)
Lentil ragout Bolognese

Rich ragout made with lentils instead of meat, traditional recipe from my grandmother
- Brown lentils
- 500g tomato sauce
- 1 onion
- 1 clove garlic
- 1 carrot
- 1 stick of celery
- olive oil
- salt
- fresh sage
- fresh rosemary
- cinnamon
- black pepper
- 1 glass red wine
- nutmeg
- some dried porcini mushrooms
Cowboy stew

Mixed beans in a tomato sauce, keep it vegetarian or add various meats
- 2 Cans of any beans of your choice i.e kidney beans, butter beans, black eyed beans. i use 2 tins of supermarket mixed beans, preferably in sauce.
- 2 cartons of any passata. (or 2 tins chopped tomatoes)
- 1 can of baked beans
- 1/2 can sweetcorn
- 1 red onion
- peppers (again whatever colour you choose)
- fresh chillies (optional)
- season to your taste if you like it hot add chilli powder, paprika or cayenne or all of it!!
- That's it for the veggie version, if you choose to go fully cowboy then you can add whole or chopped sausages, chorizo , bacon, mince, chicken or any meat of your choice this dish is as simple and cheap or as rich and extravagant as you choose but a little goes a long way.

- 1 medium tomato

Easy Tomato Salsa

Perfect accompaniment to cheese and crackers, or in a sandwich
- 1 Can of chopped tomatoes
- 1 small onion, chopped.
- 1 clove garlic, peeled and smashed
- 1 Jalapeno
- 1 tsp honey
- Salt, to taste
- Black Pepper, to taste.
- 1/4 teaspoon ground cumin
- Cilantro or Corriander, to taste.
- 1 Lime, juiced.
Slow Cooker Beans

- 1 pound dried pinto beans

Heat the oven to 220ºc / 425ºf / gas mark 7
- 4 tbsp oil
- 500g mushrooms
- 2 garlic cloves
- 250g onions
- 250g carrots
- 2 tbsp thyme
- 1 tbsp sage
- 300ml red wine
- 400g tin of chopped tomatoes
- 150ml vegetable stock
- 2 tbsp tomato puree
- 2 tbsp soy sauce
- 425g puff pastry
- milk to glaze
Brown lentil Soup

1. Pour oil into a pressure cooker and heat it
- Brown lentils
- Chicken (optional)
- 7 garlic cloves (crushed)
- Paprika
- 4 tbsp tomato pasata/1 ½ tbsp tomato concentrate
- 3 bay leaves
- 1 ltr water (or more)
- Chilli (optional)
- 1 or 2 green chillis
- Oil (for frying)
- Coriander (chopped, only needed as garnish)

- 400g tin of chopped tomatoes
- ¼ pint/150ml vegetable stock
- 2 tbsp tomato puree
