Ingredients

  • 300g Quorn chicken style pieces
  • 3 tbsp Tikka paste
  • 250g Basmati rice
  • 200g frozen mixed vegetables
  • 1 red onion
  • handful dried apricots
  • 1 vegetable stock cube
  • 600ml boiling water
  • 3 tbsp extra water
  • 2 tbsp chopped coriander

Preparation

Step 1

Mix 2 tbsp Tikka paste with 3 tbsp of water, coat the Quorn pieces well and reserve

Step 2

In a large microwaveable bowl add the rice, frozen mixed vegetables, red onion, diced apricots, 1 tbsp Tikka paste and the crumbled stock cube

Step 3

Pour over 600ml of boiling water and mix well, cover with cling film leaving a gap at the side to vent the steam

Step 4

Cook on full power for 6 minutes

Step 5

Peel back film and stir in the Quorn pieces and any remaining marinade. Re-cover and cook for a further 6 minutes

Step 6

Leave this now for 5 minutes to allow the rice to absorb all the liquid, then fluff up with a fork

Step 7

Stir through the coriander and serve with naan bread
