Easy Tomato Salsa

Perfect accompaniment to cheese and crackers, or in a sandwich
- 1 Can of chopped tomatoes
- 1 small onion, chopped.
- 1 clove garlic, peeled and smashed
- 1 Jalapeno
- 1 tsp honey
- Salt, to taste
- Black Pepper, to taste.
- 1/4 teaspoon ground cumin
- Cilantro or Corriander, to taste.
- 1 Lime, juiced.
Roasted pepper ciabatta stacks

Cook the ciabattas according to pack instructions if necessary then depending on whether your are using little ones...
- 4 x individual ciabatta rolls (or one big one if you can't get individual ones)
- 4 x tablespoons of houmous
- 1 x red pepper
- 1 x yellow pepper
- 2 x tablespoons of grated parmesan or parmesan shavings
- 4 x teaspoons of pesto
- Salt and pepper

- 200 g onions, thinly sliced
- 1 tbsp olive oil
- 400 g tomatoes, peeled, chopped
