Vegetable Toad in the Hole

Ingredients
- 1 mug plain flour
- 3 eggs beaten
- ½ mug milk
- 1 mug water
- 2 tbsp oil
- butter to fry
- 1 garlic clove crushed
- 1 onion
- 2 carrots sliced
- 6-8 green beans
- florets of broccoli
- 2 tomatoes diced
- 4-5 mushrooms halved
- 1 tsp mixed herbs

Preparation
Step 1
Put the flour in the bowl and add the egg and a little of the milk. Mix well, beat with a whisk or large spoon. Add enough milk and water to make the mixture look like single cream
Step 2
Put enough oil in the bottom of a large casserole dish to cover the bottom, put in a hot oven, gas mark 7
Step 3
Boil the carrots and green beans in a little water while you fry the onions and garlic. Add the broccoli to the carrots and beans after 5 minutes
Step 4
Add the tomatoes, mixed herbs and vegetables to the onions and garlic and stir
Step 5
The oil should be hot and smoking slightly in the casserole dish. Pour the batter in, it should bubble around the edges as you pour it in
Step 6
Carefully pour the vegetables on top and spread them out
Step 7
Place the dish back in the oven and cook for 30-35 minutes or until browned
Step 8
Turn down the temperature if the top of the 'toad' gets too browned before the centre is cooked
