Auntie Jean's Beany Mushroom Soup

  • 1 tin butter beans
  • Knob butter
  • 1 chopped onion
  • 1 chopped garlic
  • 200 g sliced chestnut mushrooms
  • 600 ml veg stock
  • 300 ml skimmed milk
  • Salt and pepper

Step 1

Melt butter. Once bubbling, add onion and garlic. Cook without colouring 8/10 minutes. Add sliced mushrooms, mix. Add butter beans and veg stock. Bring to simmer and cook gently 15/20 minutes

Add milk, return to simmer. Season with salt and pepper and liquidise.

If required, garnish with fried mushrooms and some reserved butter beans.
