This recipe is one my aunt shared with me, a nice side dish for sweetcorn lovers.

Ingredients

  • 2 eggs
  • salt and pepper to taste
  • 1-1 1/2 tsp green chilli
  • 1/2 cup flour
  • 1 large tin sweetcorn
  • 1/4 cup grated cheese (or more)
  • a handful of chopped green dhana (optional)
  • olive oil to shallow fry

Preparation

Step 1

Whisk the eggs with the salt, pepper and green chilli. Add flour and whisk till smooth.

Step 2

Add the sweetcorn, grated cheese and green dhana and mix evenly.

Step 3

Fry using a few tablespoonfuls of oil (very shallow) by dropping tablespoonfuls of the mixture into the pan and making little patty shapes/rounds. Flip over when golden and allow to cook on the other side. Drain on paper towel (kitchen paper). Serve warm.
