My mother claims that corn was the first solid food that I ever ate, and I certainly believe her, as it has always been one of my favorite foods. Any recipe that contains these golden kernals of joy is sure to be a winner in my book, although I'll always be partial to a simple buttered corn on the cob. Peeling off those husks right before cooking is one childhood pleasure that has carried right into adulthood! I particularly like them accompanying a hamburger or anything barbeque. (As a side note, the same goes for my sister and beans, she can't get enough of them!)

This recipe is one my aunt shared with me, a nice side dish for sweetcorn lovers

  • 2 eggs
