Ingredients
- 4 slices of bacon (diced)
- 1 small onion (chopped)
- 1 C celery
- 2 large potatoes (peeled & cubed)
- 1 L milk
- 1 can of corn
- 1 tsp salt
- pepper to taste
- 1/4 tsp hot sauce

Preparation
Step 1
Cook bacon in stock pot
Step 2
Add celery and potatoes to pot
Step 3
Add remaining ingredients. Cover and heat (don't boil).
Step 4
Simmer 20-30 minutes, until potatoes are tender.
Soup can be thickened if desired with a roux, or by using heavy cream instead of milk.
Garnish with grated cheese on top.
