Ingredients

  • 120g Polenta
  • 150g Self Raising Flour
  • 2 tsp Baking Powder
  • 600g Sweetcorn
  • 4 Eggs
  • 60g Chopped Parsley
  • 400 ml
  • Salt and Pepper

Preparation

Step 1

Mix the dry ingredients and then stir in the eggs with the milk

Step 2

Lastly add the corn and parsley and let the mixture stand

Step 3

Fry in chosen size and allow to colour on both sides to ensure it has cooked all the way through

Step 4

They can be refrigerated but let them cool first
