  • 2/3 cup whole - wheat flour
  • 2/3 cup unbleached flour
  • 1/3 cup cornmeal
  • 1 Tbs. baking powder
  • 1 tsp. powdered ginger
  • 1/2 tsp. baking soda
  • 2 cups nonfat yogurt
  • 3/4 cup fat-free egg substitute
  • 1/4 cup honey
  • 2 Tbs. apple sauce
  • 1 large apple
  • shredded

Step 1

1. Mix together first 10 ingredients until smooth. Stir shredded apple into batter.

Step 2

2. Coat a large non-stick frying pan with nonstick cooking spray and place over medium-high heat. When pan is hot pour in 2/3 cup of batter for each pancake.

Step 3

3. Cook until lightly browned and cooked through or about 2 minutes per side. (A good sign is when the pancake is gets bubbly on the sides and top when first poured).
