Emerald Soup

A delicious and starter soup or for a larger serving try having a bigger bowls with a crusty buttered baguette
- A bunch of Asparagus (say 10 stalks)
- A few fistfuls of fresh spinach
- 1 onion
- 2 garlic cloves
- 1/2 pint of chicken stock
- 280ml double cream
- lots of pepper
- a couple of pinches of salt

- FOR THE TOMATOES:

- 4 Vine Tomatoes (Cut in half)

- 100g Feta Cheese

- Rind of 1 Lime

Red lentil soup

Chop the vegetables and sautè with the lentils for a couple of minutes
- 3 cups broth
- 1 cup red lentils
- 1/2 cup oats
- 1/2 carrot
- 1/2 onion
- 1 clove garlic
- turmeric
- chilly flakes
- salt

Kale and Chickpea Soup with Lemon

A warm and filling soup with a slight bite and a sharp edge
- 1 Tbsp olive oil
- 2 banana shallots (or one onion)
- 1 stick of celery
- 2 stalks of rosemary
- ¼ tsp of chilli flakes
- 1 garlic clove, peeled
- 1 410g tin of chickpeas drained and throughly rinsed
- 200g bag of chopped kale
- 800ml hot stock (a cube or powder is fine – I used a combination of Marigold powder and vegetable stock)
- Juice of half a lemon
- Salt to taste
- TO SERVE
- Paper thin lemon slices
- Grated parmesan cheese (omit if vegan)
- Toasted crusty bread (optional)
Sweetcorn and Smoked Haddock Chowder

Melt butter, add chopped bacon and onion
- Knob of butter
- 2 rashers streaky bacon, chopped
- 1 onion, finely chopped
- 18 fl oz milk
- 2 medium potatoes, cubed

- 2-3 medium onions, finely sliced
- 2 sticks celery, chopped
