- 3 red peppers
- 2 aubergines
- 8 tbsp olive oil, plus a dash for baking
- 1 small tin tomato sauce
- Equal quantity white sauce as tomato sauce
- 300g fresh pack lasagne sheets
- 125g mozzarella
- Half a dozen cherry tomatoes, halved

- Oil
- 3 cloves crushed garlic
- Half a 30g tin anvhovies, chopped
- Load of asparagus, tips left intact and rest chopped
- 4 spring onions, chopped
- Few handfuls peas
- Few handfuls spinach
- 300ml single cream
- Bunch of fresh mint, chopped
- Grated zest of 1/2 a lemon
- 2 blocks of feta
- Bit of veg stock if necessary (I used Veg oxo cubes in boiled water)

- 1 onion, sliced
- 2 leeks, washed and sliced
- 1 clove garlic, crushed
- 350g (12oz) closed cup mushrooms, sliced
- 30ml (2 tbsp) hot vegetable stock
- 225g (8oz) small broccoli florets
- 40g (1½ oz) butter/margarine
- 40g (1½ oz) plain flour
- 850ml (1 ½ pints) semi skimmed milk
- 175g (6oz) British Mature Cheddar Cheese, grated
- 280g (10 oz) cooked skinless, boneless chicken breast, diced
- 5-10ml (1-2 tsp) finely chopped fresh tarragon

Cook the lasagne pasta as directed on the packet (usually al dente), drain and cool under cold water
- Enough lasagne sheets for the size of your dish and number of guests,
- 1 kilo of spinach (preferably fresh)
