Ingredients
- 1 bag of quorn mince
- Salt and pepper to taste
- 1 chopped onion
- Can of chopped tomatoes
- 2 cloves garlic
- 2 tablespoons mixed herbs
- 1 cup ricotta cheese
- Pack of egg lasagne sheets
- 2 cups grated mozzarella cheese

Preparation
Step 1
Sauté onions, garlic, cooking oil and quorn mince in a pan until onions are golden brown, then add tomatoes and seasoning. Simmer until heated through, then remove from heat.
Step 2
Grease muffin tin, then place sheets of lasagne in each cup, making sure they stick to the sides and pressing firmly.
Step 3
Layer ricotta, then tomato and quorn sauce, then mozzarella, then another sheet of pasta, then repeat with the final layer being mozzarella.
Step 4
Cook until cheese has melted
