Ingredients
- 227g spinach
- 1 C feta
- 3 eggs (beaten)
- 1/2 onion (chopped)
- 1 bunch parsley
- 1/2 C olive oil
- 4C tomato sauce
- 500g cooked lasagna noodles
- 2C mozzarella

Preparation
Step 1
Preheat oven to 350F. Blanch spinach 30 seconds, and squeeze dry.
Step 2
Whisk 3/4 C feta with egg.
Step 3
Chop onion, spinach, and parsley, and combine with egg. Add oil.
Step 4
Put noodles and vegetable mixture in 3 layers. Top with mozza and remaining feta.
Step 5
Bake for 40 minutes.
