Fill a large saucepan with water and bring to the boil

- 250g of lard
- 3 pinches of salt

- For the filling:
- 4 leeks
- 15g butter
- 4 tbsp of heavy cream

- pre-boiled rice
- 1-2 carrots peeled & either cut into thin strips or grated
- 1 green chilli (optional)
- 1 large onion diced
