- 1kg tomatoes
- ½ onion
- 1 garlic bulb
- 2 red bell peppers
- 400g tinned chopped tomatoes
- 400g tinned baked beans

- 1.2 litres (2 pints) Hot Vegetable stock (you can use 2 Knorr vegetable cubes)
- 1 green chilli deseeded and chopped finely
- S teaspoons finely grated ginger
- 1 tablespoon medium curry powder
- 400g (14oz) sweet potatoes peeled and diced
- 100g (3 ½oz) red lentils
- Juice of ½ lime or lemon
- To Serve:
- 4 Tablespoons 0% fat Greek yogurt

- ½ iceberg lettuce
- 1 medium onion
- 2 sticks of celery

- 1 tsp pumpkin seed oil
- Vegetable stock

- 200g beef brisket, cubed
- 1 litre beef stock
- 500ml water
- 3 tbsp fish sauce

- Half stick of cinnamon
- 1 clove garlic, thinly sliced
- 1 small white onion, thinly sliced

Cream of lettuce soup with a hint of mint

Cut the lettuce into small pieces and wash it
- 1 large lettuce
- 20g butter
- 1 onion, sliced

The stock: Bring the stock to a boil, then turn off the heat and add the star anise

- 75 cl of bouillon stock preferably fresh or a reconstituted tablet.
