Heat a little water and the olive oil in a large saucepan
- 2 tsp olive oil
- 1 garlic clove crushed
- 1 onion sliced
- 2 sticks celery sliced
- 1 small butternut squash cubed
- 450ml vegetable stock
- 420g tin of red kidney beans
- 4 tomatoes halved
- 2 red or yellow peppers sliced
- 2 medium courgettes sliced
- 3 carrots diced (optional)
- 1 head of broccoli chopped (optional)
- 4 sweet potatoes steamed for 15 minutes until soft then mashed

Tip the flour into a large mixing bowl
- 300g/10½ oz strong white bread flour, plus extra for flouring
- 6g fast-action yeast
- 6g salt
- 15g/½oz sugar
- 15g/½oz softened butter
