Sweet Potato Shepherds Pie
Ingredients
- 2 tsp olive oil
- 1 garlic clove crushed
- 1 onion sliced
- 2 sticks celery sliced
- 1 small butternut squash cubed
- 450ml vegetable stock
- 420g tin of red kidney beans
- 4 tomatoes halved
- 2 red or yellow peppers sliced
- 2 medium courgettes sliced
- 3 carrots diced (optional)
- 1 head of broccoli chopped (optional)
- 4 sweet potatoes steamed for 15 minutes until soft then mashed

Preparation
Step 1
Heat a little water and the olive oil in a large saucepan. Add the garlic, onion celery and then simmer for 3 minutes
Step 2
Add the squash and heat for a further 3 minutes, stirring. At this point you can also add in the optional vegetables (carrots & broccoli)
Step 3
Pour in the stock and bring to the boil over a medium heat
Step 4
Simmer gently for 10 minutes, stirring occasionally
Step 5
Add the kidney beans, peppers, tomatoes, and courgettes
Step 6
Transfer into baking dish, add the sweet potato mash as a topping
Step 7
Bake for 15 minutes at 200ºc / 400ºf / gas mark 6
Step 8
