Ingredients

  • 2 potatoes
  • 8 bacon rashers
  • 4 eggs
  • 1 small onion
  • olive oil
  • 1 garlic clove
  • 100g of button mushrooms
  • 2 tomatoes
  • 2 tbsp fresh parsley
  • 2 baby gem lettuce (iceberg will do)
  • salt
  • pepper

Preparation

Step 1

Peel and dice the potatoes to 2cm squares
Par boil in salted water
Drain and dry the potatoes on kitchen towel
Grill the bacon rashers (cut fat off if you want)
Fry off the chopped onion and garlic, then add potatoes and mushrooms.
When bacon is done, cut into pieces and add to the pan.
Slice tomatoes and also add to the frying pan
Stir in the parsley and season with salt and pepper
Fry the four eggs
Toss the frying pan mixture in with your washed and dried lettuce leaves
Plate this up and add a fried egg to each
