Chicken salad with sweetcorn

  • 2 chicken breast
  • 170g salad
  • washed and dried
  • 1/2 red onion
  • finely diced
  • 1/2 cucumber
  • chopped
  • 25g parmesan
  • grated
  • 3 1/2 tbsp red wine vinegar
  • 2tbsp olive oil
  • 250g new potatoes
  • 1/2 carrot
  • peeled and grated
  • 1 tin drained sweetcorn

Step 1

Preheat the oven to 180C

Step 2

Season the chicken breasts with one pinch of salt and a turn of black pepper and then place on a baking tray and cook for 15 mins or until cooked through

Step 3

Once chicken is cooked allow it to cool before slicing it

Step 4

Boil the potatoes for 20 mins or until potatoes are tender

Step 5

While the potatoes are cooking put the red onions in a small bowl and cover with the red wine vinegar and leave to marinate for 30 mins

Step 6

Once the potato is cooked cool and cut in half lengthways

Step 7

Drain the red onions and keep the vinegar aside

Step 8

Mix the onions with the potatoes, sweetcorn, salad leaves, cucumber and 2/3 of the parmesan

Step 9

Dress the salad with the olive oil and 1 tbsp of the red wine vin egar marinade

Step 10

Sprinkle the remaining parmesan nad grated carrot and serve
