- 2 beef tomatoes
- 1 ball of mozzarella
- 1 tin sweetcorn
- A few basil leaves
- 1 tsp mustard
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- Salt and pepper

Preparation
Step 1
Cut the mozzarella into small cubes. Mix with the sweetcorn and basil.
Step 2
Prepare the vinaigrette with mustard, balsamic vinegar, salt and pepper. Pour over the mozzarella, basil and sweetcorn.
Step 3
Cut the tomatoes into slices and salt lightly.
Step 4
Garnish each tomato slice with mozzarella, sweetcorn and basil, alternating the layers to make two millefeuille tomatoes.
