Step 1

Preheat the oven to 375F/190C degrees. Line the base of a small baking dish with cooked spinach. If you don't have cooked spinach you can also use a handful of fresh spinach drizzled with olive oil. Spinach works well but you can add anything you like to the base (leftover roast potatoes, a spoon of pesto). Drop in a few cherry tomatoes in once the spinach is down.

Crack an egg over the base ingredients. Sprinkle the raw egg with salt, pepper, and a teaspoon of parmesan cheese, then bake for about 10 minutes, until the egg sets. Serve with toast (don't tell killjoy).
