Ryans Pizza Pies

Created by our son for a year 7 food tech project and now a family favourite
- Pastry
- 200g plain flour and good pinch of salt Sifted
- 100g butter or 50g butter and 50g lard
- Cold water to mix
- Tomato puree or bbq sauce
- Toppings including cheese tomato ham pepperoni onions or anything else you fancy
twice boozed ham

a succulent smoked ham simmered in beer then roasted in cider, honey and ginger
- 0.75k smoked ham joint, 500ml any dark beer, 6 cloves, 4cm wedge of fresh ginger, 3 table spoons honey, 500ml any dry cider, 6-8 new potatoes, 200g carrots in skins - roughly chopped, 2 sticks of celery, roughly chopped.

Ceviche is a seafood dish popular in the coastal regions of the Americas, especially Central and South America
- 222g fresh ocean fish such as sea bass, tuna, marlin, swordfish, salmon etc, cut into 1/4-inch slices
- 60ml cup lemon, lime, or sour orange juice, or a combination
- 1 small red onion, finely sliced
- 30g chopped fresh coriander (cilantro) leaves
- 1 to 2 jalapeño peppers, ribs & seeds removed, rinsed, and finely minced
- salt and freshly ground black pepper
Steak Pasties

Preheat oven to 200oC
- 150g rump steak
- 1 teaspoon paprika
- Pinch chilli flakes
- ½ garlic clove (chopped)
- Juice of 1 lime
- Salt
- 3 sheets filo pastry
- Melted butter to seal and glaze
Bean Feast

Heat the oil in a pan and add the onions and garlic
- 1 tbsp oil
- 2 onions
- 1 garlic clove
- 1 tbsp red wine vinegar
- 400g tin of chopped tomatoes
- 1 tbsp tomato puree
- 1 tbsp vegetarian Worcestershire sauce
- 1 tbsp wholegrain mustard

- 250ml vegetable stock
- 400g tin of red kidney beans
- 400g tin of cannellini beans
- 1 bay leaf
- 75g raisins
- 225g mushrooms
- wholemeal bread to serve
Baked Pappardelle with Pancetta and Porcini

- 500ml milk
- 20g Porcini mushrooms (dried)
- 40g butter
- 25g plain flour
- 100g pappardelle
- 50g pancetta (cut into 2cm pieces)
- 4-5 tablespoons grated parmesan

Spanish Style Casserole

Heat 1tbsp of the oil in a large frying pan and fry the sausages for 2-3 minutes until lightly browned
- 300g Quorn sausages
- 2 tbsp olive oil
- 2 onion thinly sliced
- 2 garlic cloves crushed
- 1 red pepper diced
- 1 green pepper diced
- 100g sweetcorn
- 1tsp smoked paprika
- 2 tsp mild chilli powder
- 100ml apple juice
- 400g tin of chopped tomatoes
- 150ml vegetable stock
- 400g tin of cannellini or broad beans
Cod fish with an emulsion of fingerling potatoes

Put the potatoes in a pot of water with nutmeg, cumin and salt, put on the heat
- emulsion:
- 1kg of fingerling potatoes
- 20 cl of milk
- 10 cl of liquid whipping cream
- 30g butter
- 1 tsp ground nutmeg
- 1 tsp cumin
- Salt and pepper
- For the cod:
- 4 portions of cod fillet
- 30g flour
- 20g parmesan
Creamy tuna pasta bake

- Ingredients
- Serves: 4
- 350ml soured cream
- 8 tablespoons mayonnaise
- 125ml milk
- 4 tablespoons grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 900g cooked small pasta shells
- 175g fresh broccoli florets
- 2 (185g) tins tuna, drained and flaked
- 75g chopped red pepper
- 50g sliced spring onions
Beef Olives

Take each steak, cut off any excess fat around the edge and give it a bash with a meat mallet
- 1 thin slice of steak per person
- 1 sausage with the skin removed per person/steak
- Beef stock cube dissolved in 450ml of boiling water
- 2 teaspoons gravy powder
- 1 teaspoon cornflower
- Cocktail sticks or cooking string to hold the ‘olives’ together
