  • Ham/salami
  • Grated cheddar (and French cheese - optional)
  • 2 or 3 large eggs
  • Dash of milk and seasoning
  • plus a little butter

Step 1

Prepare the filling ingredients so that they're cooked (where necessary) and ready to add.

Step 2

Whisk the eggs in a cup/bowl with the milk and seasoning.

Step 3

Heat butter in a frying pan, add the egg mixture and cook over a moderate heat for a couple of minutes. Use a spatula to lift the edges to allow the liquid to run underneath.

Step 4

After a couple of minutes, add the filling to half the omelette, then fold the other half over and cook for a couple of minutes.

Step 5

Serve with crisps and salad.
