Ingredients
- 1 pack short crust pastry
- 4-6 eggs
- cheese - assorted flavours if possible
- onions
- spring onions
- bacon/ham/smoked salmon etc
- tomatoes
- 6- ish mushrooms
- possible mild chilli, deseeded & chopped
- milk - if consistency too solid
- any thing else that would taste ok in a flan

Preparation
Step 1
Roll out pastry on a floured surface & line several flan dishes
Step 2
Grate cheese, add to a large mixing bowl
Step 3
chop onions & spring onions - add to the cheese
Step 4
add 3 or 4 eggs, stir mixture together - need to achieve a gloopy consistency
Step 5
cut up bacon/ham/smoked salmon - whatever meat is being added into small chunks & add to mixture
Step 6
chop up tomatoes & add to mixture. Slice a few to place on the top of the flan
Step 7
peel & slice mushrooms
Step 8
If mixture very solid, add more eggs or some milk until gloopy
Step 9
Tip into the pastry lined flan dishes, add some sliced tomatoes to the top of the mixture
Step 10
cook for approx. 30 minutes until knife comes out clean
go through the fridge & use up all the ends of cheese/ham etc
freezes well
