Ingredients

  • Silverside beef joint - 1-2kg
  • 4 large carrots
  • 1 large onion
  • organic beef stock cube
  • 300ml hot water

Preparation

Step 1

In a frying pan, over a medium heat, seal the beef on all sides. Once sealed, place the beef in a lidded dish.

Step 2

Peel and halve the carrots and roughly chop the onion and place in the dish with the beef. Melt the stock cube in the hot water and add to the dish.

Step 3

Place foil over the dish, place lid on top of foil and fold the foil down to create a good seal. Turn oven to maximum heat and cook for 20mins. After 20mins turn down to gas mark 2 and cook for a further 3-4 hours (depending on the size of the joint).

Step 4

After a minimum of 3 hours, take out of oven, remove lid, carefully remove foil - REMEMBER THERE WILL BE STEAM - and test softness of the meat. If cooked to your satisfaction, replace lid, cover with a tea towel and leave to stand for 30mins before carving. If the joint is large and needs a further hour, turn meat over before replacing the foil and lid and returning to the oven.
