Ingredients
- 125g mozzarella (or use Boursin)
- 50g strong cheddar (grated)
- 1 tablespoon wholegrain mustard
- 4 skinless/boneless chicken breast fillets
- 8 rashers smoked streaky bacon

Preparation
Step 1
Preheat oven to 200oC (or 180oC for fan assisted).
Step 2
Mix cheeses and mustard.
Step 3
Cut slit into side of chicken and stuff with mixture.
Step 4
Wrap each breast with at least 2 slices of bacon (not too tight) to hold it together.
Step 5
Season and place on baking sheet. Cook in oven for 20-25 minutes.
