Mustard Stuffed Chicken

  • 125g mozzarella (or use Boursin)
  • 50g strong cheddar (grated)
  • 1 tablespoon wholegrain mustard
  • 4 skinless/boneless chicken breast fillets
  • 8 rashers smoked streaky bacon

Step 1

Preheat oven to 200oC (or 180oC for fan assisted).

Step 2

Mix cheeses and mustard.

Step 3

Cut slit into side of chicken and stuff with mixture.

Step 4

Wrap each breast with at least 2 slices of bacon (not too tight) to hold it together.

Step 5

Season and place on baking sheet. Cook in oven for 20-25 minutes.
