Ingredients
- 1 Cornish chicken
- The stuffing:
- · 1 piece of baguette bread cut into small pieces
- · 1/2 teaspoon lemon juice
- · 2 tsps maple syrup
- · 1 spring onion, minced
- · 1 pinch of rosemary
- · 1 pinch of sage
- · Salt and pepper (to taste)
- The marinade:
- · Juice of 1 lemon
- · 30 ml of olive oil
- · 30 ml maple syrup
- · 1 tsp. mustard
- · 1 sprig of rosemary
- · 6 sage leaves
- · 1 clove of garlic, crushed

Preparation
Step 1
Mix all the ingredients for the stuffing and fill the chicken. Tie the legs together.
Step 2
Mix all the ingredients for the marinade in a bowl. Place the chicken in the bowl refrigerate for 1 hour. Remember to turn the chicken on all sides.
Step 3
Pre-heat the oven to 180 ° C (gas mark 4). Place the chicken on a baking tray and bake for 1h/1h15. The chicken should be thoroughly cooked and golden. Feel free to baste with the marinade during cooking.
