Splat Chicken

A simple family recipe that we use time and time again. It can be changed just by adding different herbs and spices or the addition of some parmesan cheese to the breadcrumbs making it a really versatile meal for any day of the week.

Ingredients
- 100gs fresh breadcrumbs
- 1 egg beaten
- milk
- flour
- 4 chicken breasts - flattened
- seasonings of your choice eg. paprika, salt and pepper, mixed herbs, parmesan (finely grated)
- oil for cooking

Preparation
Step 1
place breadcrumbs and seasonings in a bowl
Step 2
place beaten egg in another bowl and flour in a third bowl
Step 3
dip flattened chicken pieces into the flour then the egg and then the breadcrumb mix.
Step 4
Fry chicken for 10 minutes or until fully cooked through.
Step 5
Drain on kitchen paper and serve.
