This is a really simple Italian dish, and great for a summer dinner

  • 1.5 kg chicken thighs (skin on)
  • Juice and zest of 1 lemon
  • 4 cloves garlic, crushed
  • 2 sprigs rosemary
  • Small handful parsley, finely chopped
  • 1 tablespoon plain flour
  • 1 tablespoon butter
  • 250ml white wine

Mix all the ingredients for the stuffing and fill the chicken

  • 1 Cornish chicken
  • The stuffing:
  • · 1 piece of baguette bread cut into small pieces
  • · 1/2 teaspoon lemon juice
  • · 2 tsps maple syrup
  • · 1 spring onion, minced
  • · 1 pinch of rosemary
  • · 1 pinch of sage
  • · Salt and pepper (to taste)
  • The marinade:
  • · Juice of 1 lemon
  • · 30 ml of olive oil
  • · 30 ml maple syrup
  • · 1 tsp. mustard
  • · 1 sprig of rosemary
  • · 6 sage leaves
  • · 1 clove of garlic, crushed
