Ingredients

  • - 12 good quality pork sausages
  • - 2 tbsp sunflower oil
  • - 3 onions, thinly sliced
  • - 1 & a half tsp mustard seeds
  • - 3 tbsp maple syrup
  • - 6 part baked mini baguettes
  • - 4 tsp mustard
  • - large pinch of brown or muscavado sugar
  • - 2 tsp wine or cider vinegar
  • - a splash of tabasco

Preparation

Step 1

1. Heat the oven to 220 degrees. Place the sausages on a non stick baking tray and cook for 20 minutes. Meanwhile, heat the oil in a frying pan and cook the onions and mustard seeds together for 10-15 minutes or until softened and golden.

Step 2

2. Remove the sausages and brush with maple syrup and return them to the oven for 5 minutes or until they're dark and shiny. Place the baguettes into the oven until cooked. Stir the mustard, sugar and vinegar into the onions until the sugar has melted. Add a splash of tabasco to finish.

Step 3

3. Cut open the baguettes, add two sausages to each and spoon over the onions to taste.
