Sweet and Sour pork (Gluten Free)

Delicious home made sweet and sour is not as hard as you think and takes only 5-10 mins to prepare and 20-30mins to cook
Ingredients
- 1/2 cup of water
- 1/4 cup of white wine vinegar
- 2 heaped tbs of corn flour
- 2 tbs of gluten free soya sauce
- 1 tin of tinned pineapple chunks in pineapple juice
- pinch of salt
- pack of pork loin chops - stripped of fat and cut into thin strips
- 1 green pepper - thinly sliced
- 1 onion - thinly sliced
- a small amount of cooking oil / fry light or table spoon of any oil
- (easy cook rice or microwave rice to serve)

Preparation
Step 1
Add oil to a wok, heat and add pork, vinegar and water, brown and then simmer until tender approx. 10-15 mins
Step 2
Make the sauce by adding the corn flour, soya sauce, juice from the pineapple chunks and a pinch of salt, mix together well with a hand whisk and then heat over a moderate heat until the sauce thickens
Step 3
Add the thickened sauce to the pork, vinegar and water, heat through and add the pepper and onion, stir and heat through for 5 mins, add the pineapple chunks and continue to heat and stir for a further 5 minutes.
Add some cooked rice and your dish is complete
I cover my pork over with a glass lid from a saucepan that fits just inside the wok, it's great for steaming and simmering
