  • 200g dark chocolate
  • 300g full fat soft cheese
  • 60g desiccated coconut
  • 250g digestive biscuits
  • crumbled
  • to decorate icing sugar and coconut curls

Step 1

Melt the chocolate. Add the the soft cheese to the chocolate and stir until well blended and smooth. Stir in the coconut. Place half the biscuit crumbs on the bottom of a shallow dish. Layer with half the chocolate mixture then another layer of the remaining biscuit crumbs, finishing with a layer of chocolate mixture. Chill for 2 hour. Dust with icing sugar and decorate with coconut curls.
