Christmas mini-logs with orange and spice

Ingredients
- For the sponge:
- 5 eggs
- 100g flour
- 100g sugar
- 50g butter
- 2 tsp Christmas spices (5 spices)
- 1 teaspoon of honey
- margarine
- For the chocolate icing:
- 250g chocolate
- 40g soft butter
- 200g of milk
- For the orange filling:
- Orange peel sticks
- 1 jar of orange marmalade
- If you want to prepare the marmalade yourself:
- 60 g orange peel and lemon
- 500g raw peeled orange
- 1 lemon, peeled
- 1 carrot
- 400g jam sugar

Preparation
Step 1
For the cake:
Preheat the oven to 200 ° C. Beat the egg yolks vigorously with sugar until the mixture is fluffy. Stir in the flour, spices, melted butter, honey and egg whites beaten until stiff. Roll out the dough on a baking tray lined with greaseproof paper and greased with margarine and bake for 5 min at 200 ° C. When removed from the oven, place a damp cloth on the cake, wait for 1 min and remove the cake from the tray.
Step 2
For the chocolate icing:
Melt the chocolate in a saucepan. Add the butter in chunks and milk. Melt until smooth. Leave to cool a few minutes.
Step 3
For the chocolate decorations:
Refrigerate a plate or tray lined with baking paper (it must be cold). Melt in a double boiler the 2/3 of chocolate squares. Once melted, remove from heat, add the remaining squares and stir until smooth. On a plate, draw shapes: small Christmas trees, letters of first names of your guests... and place on their log (praying that your guest's names are not too long ... or in this case you must reserve them the largest share!).
Step 4
Assembling the logs:
Cut the sponge into 4, (size of an envelope). Spread generously with marmalade. Add some chocolate icing. Place a stick of orange peel on the edge of the cake and roll the cake while it's still warm. Place the logs on a grid with a plate underneath. Pour the chocolate icing over each log (the plate under the grid will recuperate all the excess chocolate). Cut off the ends of each log for a clean cut and cut your logs into 3 for small portions. Decorate your chocolate creations. If you have gold dust (it's in some shops or online), sprinkle on top.
Step 5
