- 1 pack frozen filo pastry
- 3 chicken breasts
- 1 pack spring onions
- 1 carrot cut into matchsticks
- 4 medium mushroom sliced
- 2 TBsp mayonnaise
- 2 tbsp creme fraiche
- 40g grated cheddar
- salt & pepper

Preparation
Step 1
cut chicken breasts into strips and lightly fry until slightly coloured. Slice and dice spring onions and add to pan with chicken and add carrots and mushrooms. Season to taste. Stir in the mayonnaise, creme fraiche and cheddar. Set aside to cool
Step 2
Having thawed filo pasty, unravel on a tea towel. Take 4 sheets and spread each sheet with a little melted butter and place on top of each other. Divide filling into two halves and place one half onto each set of 4 filo sheets, to one side of the pastry. Fold in ends and roll tucking tightly. Brush with melted butter and sprinkly over some spare cheddar. Slice into portion sizes. Repeat with other sheets of filo.
Step 3
place on oven sheet and cook in a moderate oven, 250 degrees for 20-30 mins until golden brown. Serve with fennel and orange salad and bread rolls.
Can substitue chicken for fish, crab, lobster (as a treat) or even other meats or a vegetarian option.
