Ingredients

  • 1 x pack of filo pastry
  • 1 x small pot of melted butter
  • Any fillings you like- Brie and bacon works really well. Or Stilton and mushroom. Boursin and cherry tomato? Or you can make them sweet by adding things like chopped nuts and Nutella. Get creative!

Preparation

Step 1

Preheat the oven to 180 degrees. Cut the filo pastry into squares about 5x5 cm. brush the bottom of each hole of a mini muffin pan with butter and then place a sheet of filo pastry inside. Brush with oil and add another piece of filo until each one is 3 or 4 layers deep.

Step 2

If filling with bacon or mushroom then cook that first until it is cooked enough to eat, then place a few pieces in the bottom of each little cup and top with the cheese.

Step 3

Put in the oven for approx 10 mins or until the pastry is cooked and the cheese is bubbling!! Turn out and enjoy! Yum!
