Spanish Style Casserole

  • 300g Quorn sausages
  • 2 tbsp olive oil
  • 2 onion thinly sliced
  • 2 garlic cloves crushed
  • 1 red pepper diced
  • 1 green pepper diced
  • 100g sweetcorn
  • 1tsp smoked paprika
  • 2 tsp mild chilli powder
  • 100ml apple juice
  • 400g tin of chopped tomatoes
  • 150ml vegetable stock
  • 400g tin of cannellini or broad beans

Step 1

Heat 1tbsp of the oil in a large frying pan and fry the sausages for 2-3 minutes until lightly browned

Step 2

Remove from the pan and set aside to cool

Step 3

Slice sausages diagonally into 5 pieces

Step 4

Add the remaining oil to the pan and fry the onions and garlic for 4-5 minutes until softened

Step 5

Add the peppers and fry for a further 3-4 minutes. Add a little stock or water if it begins to stick

Step 6

Stir in the sweetcorn, paprika and chilli powder and cook for 2 minutes

Step 7

Add the apple juice

Step 8

Add the tomatoes, stock, beans and sausages

Step 9

Cover and simmer for 10 minutes
