Ingredients

  • 1oz/25g chickpeas
  • 1oz/25g haricot beans
  • 1oz/25g black-eyed beans
  • 1oz/25g red kidney beans
  • oil
  • 1 small onion
  • 1 carrot
  • 1 celery stick
  • 1 garlic clove
  • 8oz/250g tin of chopped tomatoes
  • ½ tsp dried mixed herbs
  • 3oz/75g cheese

Preparation

Step 1

Heat the oil and add the onion, carrot and celery. Fry until soft

Step 2

Stir in the garlic, pulses, tomatoes and herbs

Step 3

Bring to the boil, cover and simmer until the beans are cooked

Step 4

Sprinkle the cheese over the top

Step 5

Serve with rice
