Chilli Bean Tacos

  • 1 tbsp oil
  • 1 large onion
  • 1 red chilli
  • 2 garlic cloves
  • ½ tsp mild chilli powder
  • 410g tin of black-eyed beans
  • 410g tin of kidney beans
  • 2 x 400g tin of chopped tomatoes
  • 1 tbsp tomato ketchup
  • To serve:
  • 12 taco shells
  • 6 tbsp grated cheddar
  • 6 tbsp sour cream
  • 1 lime cut into wedges

Step 1

Heat the oil and cook the onion and chilli for 5 minutes until softened

Step 2

Add the garlic and chilli powder and cook for 5 minutes

Step 3

Add the beans and tomatoes

Step 4

Simmer for 20 minutes until thickened

Step 5

Add the ketchup

Step 6

Heat the tacos

Step 7

Fill the tacos with the bean mixture

Step 8

Serve with cheese, sour cream and lime wedges

Step 9
