Ingredients

  • Paste:
  • 3 tbsp olive oil
  • 1 red onion chopped
  • 3 garlic cloves
  • 3 cm fresh ginger grated
  • 1 tsp cumin
  • 1 tbsp paprika
  • 1 tsp turmeric
  • 1 tsp mild chilli powder
  • Tagine:
  • 3 tbsp olive oil
  • 2 carrots cut into sticks
  • ½ a swede cubed
  • 2 red onions cut into wedges
  • 3 sweet potatoes cubed
  • 400ml vegetable stock
  • 6 dry apricots halved
  • ½ a bunch of mint chopped

Preparation

Step 1

Place all the paste ingredients in a food processor and puree

Step 2

Heat the oil in the pan, add the paste and saute for 1-2 minutes

Step 3

Add the carrots, swede, red onions and potatoes and stir

Step 4

Add the stock

Step 5

Cook on a low-medium heat for 40-50 minutes until the vegetables are soft but not mashed

Step 6

Add the apricots

Step 7

Cook for a further 10 minutes

Step 8

Sprinkle with mint and serve
