Ingredients

  • oil
  • 1 onion chopped
  • 1 carrot
  • 1 courgette
  • 4 mushrooms sliced
  • 1 sweet potato
  • ½ mug frozen peas
  • ½ red or green pepper
  • broccoli florets
  • cheese sauce
  • 2 tsp vegetarian Worcestershire sauce
  • ½ mug grated cheese

Preparation

Step 1

Place the carrots and sweet potato in a pan, cover with water, bring to the boil and simmer for 5 minutes

Step 2

Add the broccoli and peas and cook for 5 minutes

Step 3

Fry onions until soft

Step 4

Add mushrooms, peppers and courgette and cook for 2 minutes

Step 5

Mix all the vegetables together, place in a casserole dish and sprinkle with Worcestershire sauce

Step 6

Make a double quantity of cheese sauce and pour over the vegetables

Step 7

Sprinkle the grated cheese over the top and bake in the oven for 20-25 minutes gas mark 5
