
Ingredients
- 1 onion roughly chopped
- 2 cloves garlic cruched and sliced
- 1 green peppercored and chopped
- 200g mushrooms, halved
- 1 tin chopped tomatoes
- 1 tin kidney beans, drained and rinsed
- Seasonings; salt/pepper/paprika/cumin/chilli powder/sugar/tomato puree

Preparation
Step 1
Heat 2 tbsp olive oil in a good heavy pan, saute chopped onion for about 3 mins on lowish flame
Step 2
Add garlic, chopped pepper and mushrooms and saute until mushrooms begin to brown
Step 3
add spices to taste and stir for about 30 secs.
Step 4
Add in tomatoes, tomato puree,beans and a spoonful of sugar. Stir well and bring to boil
Step 5
Turn down to very low heat , cover and simmer for about 20 mins, stirring occasionally
Step 6
Serve either on bed of rice or in a bowl with chunky bread!!
It's a veggie dish, but can be a tasty accompaniement to grilled chicken
