Ingredients

  • 8oz/250g pasta
  • 2 tbsp oil
  • 1 onion
  • 2 garlic cloves
  • 1 red pepper
  • 8oz/250g creamed tomatoes
  • tin of chopped tomatoes
  • 1 tbsp red pesto
  • 4oz/125g broccoli florets
  • 1 aubergine
  • 1 courgette
  • 5oz/150g mozzarella cheese grated

Preparation

Step 1

Heat oven to 180°c / 350°f / gas mark 4

Step 2

Cook the pasta for half the time stated on the pack and drain

Step 3

Heat the oil and fry the onion, garlic and pepper for 5 minutes

Step 4

Add the creamed tomatoes, chopped tomatoes and red pesto

Step 5

Simmer for 2 minutes to make a thick tomato sauce

Step 6

Put the pasta in a dish, cover with the broccoli, aubergine and courgette and sprinkle with the cheese

Step 7

Spoon the tomato sauce over the bake

Step 8

Cook in the oven for 1 hour
